Which two centers

I need to start two centers out of these guys for the entire week (mon-sun):

Eddie Curry (Larry Brown makes me worry)
Andrew Bogut (Joe Smith may be back Wed)
Primoz Brezec (Minutes have been down so far)
Zaza Pachulia (been decent so far)

Also Brezec has 4 games this week, Pachulia has 3, and Bogut and Curry have only 2. What's a good strategy for setting weekly lineups when games played varies?

Well generally, assuming the players are about equal, I think you have to go with the player who will be playing more games, unless there are significant match-up issues with the teams they will be facing.

You can't just always go with the player playing more games. You are limited to 82 games per position so if you pick the center starting 4 games every week, you will not get points for your center over the last few weeks of the fantasy season since you would have exceeded your 82 games.

I like Pachulia best out of that list.

He has been a good double-double guy who chips in a good amount of blocks. He also shoots a good FG%. He's safe and won't hurt you; he will only help you out.

I'd stay away from Curry for now. There are a ton of shooters in NY and he is not getting shots. He's never been a good rebounder so he's in trouble fantasy-wise.

Brezec is solid and with Bogut having to fight for minutes, I'd go with him. He isn't getting a ton of minutes but he's good for 10 points and 7 rebounds a game even with the minutes he is getting.

He's also been chipping in with a few assists and steals along the way as well.

Him and Pachulia will be a nice boost to FG%, rebounds, and blocks and will chip in some other stats along the way.

That is who I would go with.
